The pick of the week is Eggplant from Bundaberg and North Queensland which are abundant at the moment. This versatile ingredient is a great source of dietary fibre, low in calories and packed full of vitamins A, B and C. Its striking purple colour is due to the presence of anthocyanin, an antioxidant that reduces the risk of cancer and diabetes and combats inflammation. Look for firm fruit that is heavy for its size, with glossy purple skin. Eggplant can be sliced and fried, added to curries and casseroles or roasted for a richer, smokier flavour like in this Eggplant, Lemon and Garlic dip.

Tomatoes and Zucchinis from Bundaberg and the Bowen Gumlu region are in great supply at the moment with prices for tomatoes trending down. Both are high in vitamin C – just what you need to keep winter colds at bay – and a range of antioxidants. They are delicious on their own or as a double act as in this Tomato and Zucchini Galette.

The colder weather and recent rain are tightening supply of some vegetable lines but Snow Peas and Sugar Snaps out of Bundaberg remain plentiful. Snow Peas are and excellent source of dietary fibre, B vitamins and folic acid which is recommended for pregnant women to prevent neural tube defects. Eat them lightly blanched with a dipping sauce or for something more substantial try this Asparagus and Snow Pea Risotto with Fetta and Hazelnuts.

Supplies of most citrus lines remain strong. The overlap of Queensland and Victorian growing seasons is keeping Navel Oranges plentiful. Imperial Mandarins from Victoria and Lemons and Honey Murcott Mandarins from Gayndah are in good supply.

Pineapples from Maryborough and the Sunshine Coast are well supplied with the Queensland Gold variety especially good eating at this time of year. Pineapples are a great winter choice because of their high level of vitamin C. They are also rich in the enzyme bromelain that helps prevent arthritis by easing inflammation. Watermelons from the Northern Territory and Rockmelons from Western Australia are in good supply. Apples out of Victoria and Stanthorpe are plentiful including Red Delicious, Pink Lady, Gala and Fuji. Cavendish Bananas from North Queensland and Lady Fingers from Coffs Harbour are also well supplied. Bananas are the perfect snack, high in potassium and a range of vitamins and healthy sugars for sustained energy. Spice up your winter weekend breakfast with these Banana Raisin Pancakes.
